An end grain cutting board does a lot more than just being aesthetically pleasing in the kitchen. Due to the end grain facing up it provides a hard flat cutting surface. Since it is the hardest part of lumber it withstands the daily beating from chopping, slicing and dicing. The best part is actually better for your knife since it won't dig into the wood. Your knife will stay sharper longer. I ensure to add extra durability to all my cutting boards by using a few 3/8" all thread with washers and nuts to hold everything together for years to come. Caping the ends to hide all the hardware so there is no eye sore. Speaking of eye sore, the grain swirls and the way the tree lived it's life really comes to life with an end grain cutting board by becoming a 'timber tale' for daily use in your kitchen.
